- 1 cup raw cashews
- 1 cup soft dates
- ¾ cup unsweetened shredded coconut
- ¼ tsp vanilla extract
- 1/8 tsp sea salt
Add cashews into the processor and pulse until they become flour-like.
Then, add in the rest of the ingredients and pulse until one smooth texture.
Roll the dough into small balls. Or use a cookie scoop to just scoop them out.
Store in a refrigerator for at least 30 minutes before serving.
