The great news is that making a baked brie is so much easier than it might appear. Whenever a special occasion crops up on my calendar, this is the recipe that I reach for.

And now, I’d like to share it with you! With a delicious creamy base, a sweet (but not too sweet) sauce, and delicious stewed apples, this is a play of texture and taste you and your guests will love.

What is Brie?

Brie is a type of cheese made from cow’s milk. It’s known as a soft cheese with a mild, buttery flavor. This makes it a wonderful choice as a foundation for sweet, richer flavors like fruits and nuts.

Ingredients and Substitutes for Baked Brie

Brie cheese wheel (8 oz) – You can use camembert, Chaource, or a vegan alternative.

Apples (2) – Best to use Granny Smiths, Braeburns, and Honeycrisps.

Brown sugar (1 tbsp) – You can also use coconut sugar.

Cinnamon (½ tsp) – Apple spice works, too.

Nutmeg (¼ tsp)

Lemon (1/2)– Lime or other citrus fruit will work too.

Butter (2 tbsp) – Margarine or another neutral oil can work here.

Honey (2 tbsp) – You can also use maple syrup or another liquid sweeter!

Walnuts (1/4 cup) – Pecans, almonds, brazil nuts, or even cashews work too.

How to Make Baked Brie

Step 1. Preheat your oven to 350F (180C). While that’s heating up, line a small baking dish with parchment paper to prepare it for the brie.

Place your brie wheel onto the parchment paper. Place it in the oven and bake it for fifteen minutes.

Step 2. Cut up your apples into pieces as much as you can manage.

Step 3. Combine all the sauce ingredients – your apples, brown sugar, cinnamon, nutmeg, and lemon juice – in a bowl. Let that sit for 5 minutes.

Step 4. Heat up your pan and drop your butter in there. You want the butter to melt without browning.

Step 5. Drop your soaked apples into the pan, but leave the juice in the bowl. We’ll be using this later on. Cook on high heat for 7 minutes.

Step 6. Once you notice the apples starting to brown up, that’s how you know they’re getting close to being ready.

Step 7. Remove the apples and put them back in the bowl with the sauce. As quickly as you can, douse them with the honey to let them caramelize and mix together.

Step 8. Once your brie is baked, bring it out of the oven. Use a flat spatula to carefully transfer brie onto the center of the plate (and grab the melted cheese along with it).

Top liberally with your apples, and sprinkle with chopped walnuts to complete the dish. You’re ready to enjoy!

How to Serve Baked Brie?

When you serve baked brie, simplicity is best. Use the parchment paper to lift your brie out of the baking dish and place it in a shallow glass bowl.

Drizzle it with your prepared sauce, accompany it with some crackers, and serve.

What Kind of Apples to Use?

The best kind of apples to use are baking-friendly apples. Think Braeburns, Honeycrisps, or even Granny Smith apples. These soften well in the oven while keeping their shape.

They also don’t release too much juice, which yields a much better result.

What Fruit Tastes Best with Brie?

Brie is perfect for pairing with sweet fruits. The rich, mellow creaminess of the brie loves being paired with simple fruits like pears and apples but also with stone fruits like peaches, figs, and plums.

Luckily, these fruits also stew beautifully, so they make great sauces for baked brie.

Other Topping Ideas for Baked Brie

  • Jams: Honey, fig, orange, plum. Jams are a great way to simplify the brie baking process.
  • Nuts: Add a bit of crunch with pistachios, pecans, slivered almonds, or hazelnuts.
  • Dried fruit: Raisins, dates, apricots galore! If the pieces are large, make sure to chop them up so they’re easy to enjoy.

Ingredients 

  • 8 oz brie cheese wheel
  • 2 apples cored and chopped
  • 1 tbsp brown sugar
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 1/2 lemon juice
  • 2 tbsp unsalted butter
  • 2 tbsp honey
  • 1/4 cup walnuts chopped

Instructions 

  • Preheat the oven to 350F, line up a small baking dish with parchment paper. Place the wheel of brie on it and bake for 15 minutes.
  • In a small bowl, combine together chopped apples, brown sugar, cinnamon, and nutmeg and squeeze in half a lemon juice. Let it sit for 5 minutes.
  • Heat up a pan to high heat, add in the butter, then add in the chopped apples without the juice. Cook on high heat for about 7 minutes, mixing with a spatula. Let those apples brown up.
  • Remove the apples from the pan, add them back into the bowl with juices, and immediately cover them with honey to let them caramelize. Mix all of them together.
  • Once the brie is baked, use a flat spatula to carefully transfer the brie onto the center of the plate. Make sure to transfer even melted cheese.
  • Top up with apples and sprinkle with chopped walnuts.
  • Dig in!
